Boiled basmati rice (about 600 g)
Chicken (1 kg)
Rabi Cooking Oil (6 tbsp.)
Garam masala powder (1 tsp.)
Coriander powder (2 tsp.)
Cardamom (6-7)
Garlic paste (1 tbsp.)
Saffron (a pinch)
Green chili (3-4)
Milk (1 tbsp.)
Onion (1-2)
Cumin seeds (2 tsp.)
Turmeric powder (1 tsp.)
Tomatoes (400 g)
Yogurt (1 cup)
First, marinate the chicken in a bowl and add yogurt, turmeric powder, chili powder and salt in it. Mix it well and keep it for 20-30 minutes. Also, soak some saffron in milk and keep it aside.
Now add Rabi cooking oil in the pan along with cumin seeds and cardamom.
Cook it for almost 2 minutes. Then add sliced onions and chopped tomatoes in it.
Also add green chilies, garlic paste and coriander powder in it and cook for 5 minutes.
Afterward, add marinated chicken in the mix and cook for 6-7 minutes. If it is quite thick, then add some water into it.
When it is done, add boiled rice in the pan and mix it well.
Now sprinkle garam masala, coriander leaves, and soaked milk saffron over it.
Add the rest of the rice over this layer and then garnish with the same ingredients again.
At last cover the lid and turn the fire to low. Let it stay covered for 10-15 minutes. Once done serve it with the raita and salad.
