1. In a bowl, add besan (gram flour), salt, red chilli powder, roasted cumin powder, baking soda, and chaat masala.
2. Add water (around 1¼ cup) and mix well to make a smooth batter (paste). Leave it for 30 minutes to rest.
3. Heat oil (Rabi cooking oil or any) in a pan for deep frying.
4. With the help of a spoon, drop spoonfuls of batter into hot oil and fry until light golden brown. Remove and set aside.
5. Take a bowl of water and soak the fried baray until soft. Then gently squeeze out excess water using your palms.
6. In another bowl, beat yogurt (dahi) and add a little milk to make it smooth.
7. Add salt, red chilli powder, ½ tsp cumin powder (zeera powder), and 1 tsp sugar into the yogurt. Mix well.
8. Add the softened baray into the prepared yogurt mixture.
9. Garnish with imli chutney (tamarind chutney) and chaat masala.
10. Top with chopped ginger and green chillies (optional) and serve chilled.
