Rabi cooking oil (2 tbsp)
3 large eggs
1 green chilli (Finally chopped
Red pepper (diced)
salt & pepper to taste
1/4 teaspoon red chilli powder
1 small onion (Finally chopped)
1 tomato (diced)
1 teaspoon milk
1 garlic clove (grated)
Heat Rabi cooking oil in a frying pan and add onion and garlic. Fry till golden brown and then add all chopped vegetables Fry until tomatoes extract their juice
Add red chili powder, salt and pepper. Beat the eggs with the milk and a dash more of salt and pepper. Pour eggs into vegetable mixture in pan.
When bottom is set , turn the side of omelette. Cook just a little more until the egg is completely set. Garnish with mint leaves and serve.
